Tete de Moine PDO (Cheese curler NOT included)

Tête de Moine DOP cheese has a thin, wrinkled rind, ranging in colour from light brown to dark hazelnut.
The ivory-coloured paste is compact and features small, regular eyes.
On the nose, the cheese releases an intense and complex aroma with notes of grass, hay, nuts and mushrooms.
On the palate, the flavour is delicate and refined, with a subtle sweetness balanced by a pleasant acidity.  
The soft, creamy texture melts in the mouth, leaving a lingering, aromatic aftertaste
