Made exclusively with raw sheep's milk, this cheese must be aged in the natural caves found in Roquefort-sur-Soulzon, in the Midi-Pyrenees Department (southwest France).
These caves are a kind of enormous natural refrigerator where the molds, obtained from the spores of Penicillium roqueforti (the name alone is a guarantee), can proliferate and give this splendid cheese its characteristic features.
It has a creamy paste, pleasantly "unctuous" on the palate, and a very pronounced aroma.
The flavor is full, intense, and very persistent, with saline notes that stimulate salivation and pair perfectly with quality sweet wines.
