Pecorino cheese handcrafted from fresh sheep's milk.
Process done in ancient times to preserve the pecorino produced in the spring and summer months. The cheese is matured for approximately 2/3 months and then covered with the must obtained in the period immediately following the harvest.
This layer allows you to keep the cheese paste soft and elastic and favors the acquisition of flavors and aromas without drying it excessively.

PAIRING: fresh or dried fruit, honey and fruit compotes

Expiration: approximately 5 months, keep the package in the refrigerator.
Storage: once opened, keep in an airtight cheese box, without plastic, without paper and preferably consume within three months.
