It is characterized by a strong personality with a hay-colored rind, and is covered in hay as it matures.
This cheese is neither heated nor pasteurized, thus maintaining many characteristics of sheep's milk.
Production is limited to the periods in which the sheep are able to provide milk with adequate characteristics.
The rind is solid and marked by holes from natural fermentation.
Accompany with a full-bodied red wine such as Brunello di Montalcino.

Shelf life: 4 months in the refrigerator
