With this Parmigiano we are approaching a more refined taste, steeped in tradition.
This Parmigiano has an intense straw yellow color, darker than previous ages.
It is defined as stravecchio for its intense properties that recall savoury and spicy flavours, with notes of pepper and nutmeg.
You can also smell aromas of pineapple and dried fruit mixed with herbaceous aromas that complete its dry and grainy appearance.
It is excellent for tasting, since at this point of maturation the cheese has reached its best structure.
