Parmigiano Reggiano aged over 36 months is a cheese characterized by a long maturation period. It is rich in tyrosine crystals, which ensure its crispness and digestibility.
With this Parmigiano we are approaching a more refined taste steeped in tradition.
This Parmigiano has an intense straw yellow color, darker than previous ages.
It is defined as stravecchio (extra-aged) for its intense properties that recall savoury and spicy flavours, with notes of pepper and nutmeg.
You can also smell aromas of pineapple and dried fruit mixed with herbaceous aromas that complement its dry, grainy appearance.
It is excellent for tasting, since at this stage of maturation the cheese has reached its best structure.
Parmigiano Reggiano aged over 36 months is naturally lactose-free and highly digestible, making it suitable for children's diets.
