Olive oil production is a centuries-old family activity, at least for a large part of our trees. The care of the plants and the secrets of production are passed down from generation to generation.
In 2000, I, Carlo Bianchi, began working in my spare time to improve the quality of our oil, taking care of every detail throughout the production process.
In 2008, I founded the Farm to consolidate our commitment to our family tradition and produce superior-quality extra virgin olive oil.
The year 2012 was a turning point, and I decided to change my life, moving from working as a mechanical engineer to becoming a full-time agricultural entrepreneur.
The olives are harvested while taking care not to subject the trees to excessive stress.
The fruit is milled on the same day.
The oil is immediately stored in airtight stainless steel containers and placed in a cellar where the temperature remains constant throughout the year.
It is then bottled in our cellar.
Our product is a distinctive Tuscan oil, the result of a classic blend of three olive varieties representative of the region. It is a medium-fruity oil with aromas of artichoke and green olives. On the palate, it offers a good balance of bitterness and spiciness, with a pleasant lingering spiciness and is rich in polyphenols and vitamins.

ORGANOLEPTIC AND SENSORY PROFILE

- Blend Characteristics: The commercial blend of Moraiolo, Leccino and Frantoio varieties offers an excellent and well-rounded fruity flavour. The bitter and spicy aromas remain balanced and perfectly integrated, giving the palate a softer, more harmonious and less aggressive finish than the monovarietal.
