For a 35 kg wheel of Gruyère, approximately 400 liters of fresh raw milk are needed. The cows that produce this precious raw material feed on pasture grass in the summer and hay during the winter season. The use of additives is absolutely prohibited. During the many months of maturing, the wheels are periodically brushed, washed with salt water and turned upside down. Humidity allows mold to develop and this then favors the maturation of the cheese, from the rind towards the inside. It is this process that gives Gruyère PDO its very special flavour. The DOP origin mark guarantees a product that complies with all the strict requirements established by the mark's specifications.
Gruyère DOP can be enjoyed as a snack with a slice of bread, or as an ingredient in tasty hot dishes. And it should not be forgotten that it is the fundamental ingredient of every real fondue
