Famous for its delicate flavour, Coppa di Parma PGI is a cured meat product made from the dorsal cervical part of pigs raised in Italy. The meat is processed and flavoured with various ingredients including salt, pepper, garlic and white wine before being stuffed into the so-called 'bondiana' casing and then tied by hand. Thanks to a long maturation period (minimum 90 days), coppa has always been known for its savoury taste, its balanced consistency and for the typical red and white colour given by the presence of lean and fatty meat.
