Tete de Moine PDO (Cheese curler NOT included)

Tête de Moine PDO has a thin, wrinkled rind, ranging in colour from light brown to dark hazelnut.
The ivory-coloured paste is compact and has small, regular eyes.
On the nose, the cheese releases an intense and complex aroma, with notes of grass, hay, dried fruit and mushrooms.
On the palate, the taste is delicate and refined, with a light hint of sweetness balanced by a pleasant acidity.
The soft and creamy consistency melts in the mouth, leaving a persistent and aromatic aftertaste
