Blue cheese aged in "Raboso Passito IGT" wine and cranberries. This exceptional, award-winning cow's milk blue cheese is made by aging in Raboso Passito wine and cranberries.
The cheese is creamy, with a widespread presence of blue veins due to the blue marbling.
It is certainly a work of art for its elegance and harmony: an intense, decisive flavour, which is balanced by the typically sweet, vinous hint of Raboso passito.
He has won numerous awards: the Gold Medal in the "blue cheese" category at the 2012 Alma di Caseus competition, organized by the International School of Italian Cuisine led by Gualtiero Marchesi. Then, in 2013, he was awarded by Slow Food and ONAF at the international "Cheese" event in Bra, with a diploma of excellence at the "Infiniti Blu" competition held in Gorgonzola.
From then on, Blu 61 has always stood out, collecting awards that also demonstrate how the quality of the product has always remained unchanged.
Ingredients: Milk, salt, lactic ferments, ferments, rennet. Dried cranberries (cranberries, sugar, sunflower oil) (min. 4%) and "Raboso Passito IGT" wine (1%) in the crust.
