The ancient Maremma tradition is revived in our "Ballone", a large pecorino cheese (approx. 15 kg). This pecorino undergoes a long aging process, after which it is wrapped in straw. The straw-colored paste is compact and granular, and the taste is full-bodied and enveloping.
Made exclusively from a careful and meticulous selection of milk from selected pastures.
Under the layer of straw, the rind is rough and irregular, and may sometimes show imperfections, which are a testament to the artisanal nature of our production.
Ingredients: pasteurized sheep's milk, rennet, salt, lactic cultures. Non-edible rind
