Stuffed sheep

The ancient Maremma method is brought back to life in our Ballone, a large pecorino cheese (around 15 kg). This pecorino undergoes a long aging process, after which it is straw-wrapped. The straw-wrapped paste is compact and granular, with a full-bodied, enveloping flavor.  
Made exclusively from carefully selected milk from selected pastures.  
Under the layer of straw, the rind is wrinkled and irregular and may sometimes show imperfections that reflect the artisanal nature of our production.

Ingredients: pasteurized sheep's milk, rennet, salt, lactic ferments. Non-edible rind

Despite compliance with HACCP hygiene procedures, due to cross-contamination at the counter they may contain traces of all 14 allergens (EU Reg. 1169/2011) (gluten, milk, nuts, mustard, eggs, celery, soy, sesame, peanuts, sulphites, fish, crustaceans, molluscs, lupin).

In case of severe allergies or coeliac disease, purchasing products portioned at the counter is not recommended.
