Pecorino cheese handcrafted with fresh sheep's milk.
A traditional method used to preserve the pecorino produced during the spring and summer months. The cheese is aged for approximately 2/3 months and then covered with grape must obtained immediately after the harvest.
This layer helps keep the cheese paste soft and supple and promotes the absorption of flavors and aromas without drying it out excessively.
