Pecorino with chives is a pure sheep's milk cheese from the pastures of the Sienese countryside and the Crete Senesi.
Here, the countryside is characterized by a scarcity of grass but an abundance of particularly aromatic essences such as catnip, wild mint, thyme, and arugula.
These elements give the milk unique qualities. Processing takes place a few hours after milking using methods still linked to Sienese tradition.
After a slow and careful maturation, the pecorino is ready to be eaten and appreciated for its sweet and delicate taste.
Ingredients: pasteurized sheep's milk, salt, chives (min. 0.5%), rennet. Surface treated with preservatives E235, E202. Non-edible rind.
