Its texture is semi-mature, medium crumbly and its taste is lively, not excessively savory with a pronounced sweet scent of undergrowth.
It is excellent for fresh appetizers and for filling sandwiches and toasts or sandwiches and cheeseburgers. It should be accompanied by light and fresh white wines or Charmat method sparkling wines, including rosés, which enhance its flavour.
