Bitto DOP is a typical cheese, it is produced exclusively with cow's milk derived from traditional breeds in the area (with the addition of a maximum of 12% goat's milk).
Bitto DOP contains the typical aromas of mountain pasture cheeses. The rind of the cheese is compact and straw yellow in colour, which becomes more intense as it matures.
The paste is compact and has slight holes, with a color that varies from white to straw yellow, depending on the maturation.
The flavor of Bitto cheese is sweet and delicate, but becomes more intense as it matures. The addition of goat's milk makes its aroma even more characteristic.
Furthermore, Bitto cheese has a fat content in the dry matter of no less than 45%, which contributes to its texture and unique flavor.
Bitto cheese is a versatile ingredient that can be enjoyed alone or used in numerous culinary preparations.
Thanks to its unique flavor and taste characteristics, Bitto cheese is often used as an ingredient in traditional dishes from Valtellina, such as the famous polenta taragna.
Additionally, Bitto cheese can be grated and used as a seasoning for salads, pasta and soups. Its creamy texture and intense flavor make it a delicious addition to many dishes.
