The Traditional Balsamic Vinegar DOP of Reggio Emilia is taken from the cooked must of two different types of grapes from the Emilian vineyards, Trebbiano and Spergola, left to ferment, oxidize and age in the dim light of the attics of the vinegar factories owned by Ferrarini.
In this patient process, which lasts for over 16 years , under the expert care of a master, the flavor of the must blends with that of the juniper, black locust and chestnut barrels in which it is kept. This meeting of art and nature is the secret of a goodness recognized and esteemed among the gems of Italian gastronomy.
Traditional Silver Balsamic Vinegar stands out for its sweetly soft, refined taste, which makes it suitable for completing refined dishes such as beef fillet and goose liver
